Macaroons


My First Baked Macroons


INGREDIENTS

1/3 cup of butter
3/4 cup of sugar
1 can condensed milk
1/2 tsp vanilla extract
1/2 cup flour
2 cups of desiccated coconut
2 eggs

METHODS

  1. In a bowl, cream butter using a hand mixer on low speed. Add sugar and beat together until well blended and fluffy. Add eggs one at time, beating continuously. Add condensed milk and vanilla extract and continue to beat until blended.
  2. In a medium bowl, combine flour and desiccated coconut. Add to egg mixture and beat until combined.
  3. Scoop into paper-lined mini muffin pans and bake in a 350 F oven for about 15 to 20 or until golden. Allow to cool for about 5 minutes.

Chocolate Peanut Butter Cupcakes

Try this Chocolate Peanut Butter cupcakes that produces fantastic combination.

INGREDIENTS

2 cups of all purpose flour
1 tsp baking powder
1/4 tsp salt
3/4 Hershey cocoa powder
1/2 cup of milk
1 egg
1 cup of peanut butter
1/2 cup butter
1/2 cup of sugar

METHODS

1. Combine all dry ingredients then set aside.
2. In a mixing bowl, put butter, milk and egg then mix.
3. Combine the dry and liquid ingredients.
4. Using ice cream scoop, put it in cupcakes tray.
5. (Preheat oven to 350 F) 
6. Bake for 15 to 20 minutes.


Salisbury Steak



The Salisbury steak is a ground beef, sometimes mixed with other foods, 
shaped like a burger patty and broiled or fried, often garnished or served with sauce.

INGREDIENTS

1 pack CDO all purpose beef mix
(you can also use ground beef)
1 tbsp of oyster sauce
1 tbsp Worcestershire sauce 
1 tbsp ketchup
1 big chopped onion
1 tsp garlic powder
1 tsp sugar
4 slices of gardenia tasty bread , cut into small pcs.
(you can also use bread crumbs.)
SAUCE
1/2 sachet cream of mushroom
1 cup of milk
2 tbsp o water
1 tbsp of soy sauce
1 sachet ginisa mix

METHODS

1. Mix all the ingredients and make it into patties.
2. Fry it until golden brown.
3. for the sauce - in a boiling water add
cream of mushroom, milk, soy sauce and ginisa mix.
stir until smooth.
4. Pour the sauce on top of salisbury steak



 


Pineapple Empanada


My first baked pineapple empanada.
Empanada is turnover or mold of pastry filled with chopped 
or ground meat, vegetable, and fruit. (Dictionary.com)


INGREDIENTS

Crust
2 cups of all purpose flour
1 cup of butter
1 to 2 table spoon ice cold water
egg

Filling
2 cups of pineapple
1/2 cup cornstarch
1 cup evaporated  milk
1/2 cup of sugar

METHODS

1. For the filling - Boil  the pineapple, milk, cornstarch
 and sugar until become sticky, then set aside.
2. Using food processor bowl, pour the flour and butter .
Mix until it looks like crumb, add 1 tbsp of butter and egg then mix again.
3. Divide the dough into two.
4. Flatten the dough using the rolling pin.
5.Shape the dough using the cookie cutter. 
6. Prepare the filling.
7. Put the dough and filling to empanada mold.
8. Fold it.
9. Preheat oven in 350 F , put the empanada inside the oven.
Bake for 20 minutes.

Lemon Bar Cake with Blueberry on Top

I  loved the taste of lemon and blueberry,
so I tried to baked bar cake using the two ingredients.


INGREDIENTS

2 cups of cake flour
1 tbsp of lemon juice
1 tbsp of lemon zest
1 cup of butter
1/2 cup of sugar
1 tsp baking powder
1 tsp vanilla 
3 eggs
1/4 salt

Topping

1 cup blue berry jam

METHODS

1. Combine all dry ingredients then set aside.
2. In a mixing bowl, put butter, milk , lemon juice ,lemon zest 
and egg then mix.
3. Combine the dry and liquid ingredients.
4. Pour it rectangular bake pan.
5. (Preheat oven to 350 F) 
6. Bake for 15 to 20 minutes.


Yema Bun


Yema is a type of custard candy made from egg yolks and condensed milk.
This is a common Filipino dessert and one of the easiest to make.
In this recipe I put the yema inside the bun, that's why I called it a " Yema Bun"

INGREDIENTS

Bun

4 cups of bread flour
1/4 cup of white sugar
2 tbsp of vegetable oil
1 1/2 tsp of salt
1/1/2 tbsp of active yeast
1 1/2 cup of water

Yema

300 g condensed milk
6 egg yolks
1 tsp of vanilla


Methods

1.In a large bowl, combine warm water, yeast ,salt, vegetable oil ,
 sugar and 3 cups of bread flour
Mix thoroughly.
2. Gradually add 1 cup of flour, kneading until smooth.
3. Then place the dough in a greased bowl and turn it several times to coat.
4. Cover it with plastic or towel. Allow to rise until doubled.
5. Using the rolling pin flatten the dough. 
6. Shape the in circle form..
7.( For the yema) combine the condensed, 
egg yolk and vanilla, mix until become thick and sooth and let it cool.
8. In a  flatten circle dough put 1 tsp of yema
 inside and form it like a ball.
9. bake at 350 F for 20 -30 mins

Cheese Mango Cupcakes


Baking is very interesting.... anyone can bake  as long it is your passion.
You can also try and make your own recipe. Like what I did. 
This mango cheese cupcake is very soft and the taste is sweet and a little bit salty.
You can try this at home.


INGREDIENTS

2 cups all purpose flour
1 can (300 g) mango flavored condensed milk
1 tsp baking powder
1/2 cup of sugar
1/2 cup chopped mango fruit 
1/2 stick of quick melt cheese (grated)
1/2 stick cheddar cheese (grated)
1/2 stick of butter
2 eggs
1/4 tsp of salt

METHODS

1. In a large bowl, combine flour, baking powder and salt. 
2. In a medium bowl, beat butter, sugar and eggs 
3. Beginning and ending with flour mixture, 
add flour mixture in thirds and ½ of sweetened 
condensed milk in between (1/3 flour mixture, 
flavored ½  condensed milk, ⅓ flour mixture, ½ flavored 
condensed milk and ⅓ flour mixture). 
Beat at low speed with every addition
 4.Add quick-melt cheese and stir to combine 
5.Using a scoop or spoon, fill paper-lined muffin cups to ¾ full. 
Top with cheddar cheese and fresh mango fruit and 
bake in a 350 F oven for about 20-25 minutes 
or until toothpick inserted comes out clean 
and top is golden. Allow to cool.

Cheesy Cassava Cupcakes

Yesterday I went to supermarket and looked for all purpose flour,
but what I found was cassava flour. That moment, it came to my mind, what recipe is good using cassava flour? I was wondering if  I can  apply the recipe I used in making cheese cupcake to this recipe. So when I got home, I excitedly tried making  cheesy cassava  cupcakes. I think it was successful since  my father and mother -in- law told me  the taste is good and they loved it. 


INGREDIENTS

2 cups all purpose flour

1/2 stick cheddar cheese (grated)
1/2 stick of butter

3. Beginning and ending with  cassava flour mixture, add cassava flour mixture in thirds and ½ of sweetened condensed milk in between (1/3 flour mixture,  ½  condensed milk, ⅓ cassava flour mixture, ½ condensed milk and ⅓ flour mixture). Beat at low speed with every addition

Garlic Roasted Chicken

I love to eat roasted chicken, but It's quite expensive when you buy one. 
So I'm  happy that I discovered this recipe. The ingredients are very cheap,
and anytime you can cook it at home for your family.


INGREDIENTS

1 medium size whole chicken
1 cup of vinegar
1 cup of chopped garlic
1 tbsp of salt
1 tbsp of pepper
1 tbsp of parsley

Methods

1. Combine all the ingredients except parsley.
2. In a bowl, put whole chicken and pour the mixed ingredients
3. Marinate it for 1 hour
4. Remove the marinated chicken, sprinkle with parsley.
5. Place it inside the turbo broiler or oven  with 250 F. cook for 30- 40 minutes.

Baked Cheesy Chicken Bacon


In this recipe I used chicken breast, lemon, basil cheese bacon and parsley. 



INGREDIENTS

4 pcs very  thin chicken breasts
1 cup shredded quick melt cheese
1 tsp basil
1 tbsp of lemon juice
salt and pepper to taste
4 slice of bacon
 1 tsp parsley

METHODS

1. Flatten the 4 pcs chicken breasts.
2. Sprinkle the salt and pepper all over the chicken.
3.Pour lemon juice.
4. Put shredded quick melt cheese and basil.
5. Wrap  the bacon strip around each chicken.
6. Sprinkle with parsley.
7.Heat oven to 350 F
8. Bake for 20 minutes.
